      Store in a cool, dry place away from direct sunlight. Once opened store in an airtight container.

      How To Do It:

      You will need: 110ml water, 50ml vegetable oil, 1 lemon (grated zest for the cake; juice for the drizzle and icing)

      For the cake

      1. Preheat the oven to 180°C (160°C for Fan Oven), Gas Mark 4.

      2. Place 6 paper cases in a muffin tin.

      3. Empty the cake mix into a mixing bowl, add the water, oil and lemon zest. Using a whisk, mix to make a smooth creamy batter.

      4. Use a metal spoon to split the cake mix evenly between 6 paper cases.

      5. Put the tin in the hot oven and bake for 25 minutes, until golden and cooked through.

      6. Remove from the oven and place on a cooking rack.

      Topping 1 (Use while the cakes are warm) Place 2 tsp of icing sugar into a mixing bowl, add 1tbsp of lemon juice, mix until smooth. Spoon all over the tops of the cupcakes, dividing the mix equally.

      Topping 2 (Use when the cakes are cold) Place the remaining icing sugar into a new mixing bowl and add 2 tsp of lemon juice, mix until smooth. If too thick, add more lemon juice. Dribble the icing onto the cupcakes.
