The fluffiest American pancakes you can imagine

Ingredients

Pancake Batter

self raising flour • 150 g
sugar • 2 tbsp
baking powder • 1 tbsp
salt • 1 pinch
vegan milk • 240 ml
vegan melted butter for frying • 2 tbsp
Crackd vegan egg (1 vegan egg) • 60 ml
vanilla extract • 1 tsp
Topping of choice such as butter, maple syrup, fresh berries, whippedcream, banana, • 1 dash

1. Sift the flour and baking powder in a large bowl.

2. Into a separate bowl pour the vegan liquid egg, add the sugar, oil and vanilla. Beat well until the sugar has dissolved. Add this mixture to the dry ingredients and stir.

3. Add enough milk to make a thick batter.

4. Heat a frying pan and drop in a little butter. As soon as it starts to bubble drop in 2 or 3 tablespoonfuls of the mixture.

5. When bubbles appear on the surface, flip over and cook for another minute or two.
