Delicious and nutritious soup. Plantbased, gluten free and easy to make.
1. Heat the oil in a large saucepan and add the onion, garlic, pepper, celery, carrot, tomatoes and cook gently for few minutes.
2. Stir in the lentils, water, bring to a simmer, then cook for 20 minutes.
3. Season well. Add the mushrooms and zucchini and cook until lentils and vegetables are tender.
4. Serve with freshly toasted bread. Enjoy!
