Delicious and nutritious soup. Plantbased, gluten free and easy to make.

Ingredients

oil of your choice • 1 tbsp
1 onion, chopped
garlic cloves, finely chopped • 2 tsp
1 celery stalk, chopped
1 carrot, chopped
red pepper, chopped • 1/2 cups
1 small zucchini, chopped
french lentils, soaked overnight • 200 g
mushrooms, chopped • 100 g
cherry tomatoes • 50 g
800 • water ml
miso paste • 1 tbsp
Himalayan sea salt • 1 tsp
dried herbs • 1 tsp
black pepper • 1/2 tsp
smoked paprika • 1 tsp

Steps

1. Heat the oil in a large saucepan and add the onion, garlic, pepper, celery, carrot, tomatoes and cook gently for few minutes.

2. Stir in the lentils, water, bring to a simmer, then cook for 20 minutes.

3. Season well. Add the mushrooms and zucchini and cook until lentils and vegetables are tender.

4. Serve with freshly toasted bread. Enjoy!
